vegetarian chili

Sorry–I don’t have a photo of this recipe, so you’ll have to trust me. It’s quite good.

Spicy Vegetarian Chili

(enough to serve 8-10)

2 medium onions, diced

3 cloves garlic

2 tbsp chili powder

1/4 tsp ginger

1 tsp cumin

1 tsp Siracha/ 1-2 jalepenos, minced

1/2-1 tsp salt

1 32 oz can kidney beans

1 16 oz can black beans

1 16 oz can pinto beans

1 28 oz can diced tomatoes

-Sautee onions in 1 tbsp olive oil over medium heat until clear (~7-10 min), reduce heat and add garlic

-Add spices and continue to cook an additional 5 minutes

-Add tomatoes and drained beans

-Add 2-3 cups of water

-Let boil for 15 minutes, reduce heat to medium-low and continue to cook 40-50 minutes

-Serve with good bread

(edited to add: this is an example of how to really eat well without spending much. total cost per serving for the chili comes out to be ~$0.72, and would be even cheaper with dried beans. pair with quality bread to make a wholesome and filling meal)
