Garden Quiche

I made this simple dinner tonight. It’s nothing fancy, but it’s wholesome, filling and good. It’s so exciting when almost 100% of your meal comes straight out of your yard, isn’t it? I’m very fortunate to be able to eat this way.

Garden Quiche

-1 pie crust (this time store bought for the busy cook)

-1-2 crowns of broccoli, steamed

-1/2 tomato

-1/4 cup chopped sundried tomatoes

-1/4 cup of fresh oregano, chopped

-6 eggs

-1/4 cup of milk, cream or half and half

-1/3 a cup of cheese  -here, I used feta and some provolone and parmesan blend

-salt and pepper to taste

1) Beat eggs

2) Add the rest of the ingredients

3) Pour into pie shell

4) Bake at 350 for 40 minutes or until egg is completely set
