Egg Salad

I’ve been trying to add more eggs to my diet because they’re supposed to be good for baby boy. Plus, I can get them from my backyard. I always considered egg salad a church potluck food that people grabbed from the deli counter at the nearest Food Lion. It never had a big appeal until a sudden craving for it came on during my morning walk the other day. I decided to spice it up a little bit with a good spicy mustard and some fresh dill. Put it on a crusty, hearty slice of bread and it’s as far from church potluck food as you can get.

Egg Salad with Fresh Dill and Capers

2 hardboiled eggs 

1-2 tsp of mayonnaise (depending on preference)

1 tsp grainy mustard

1 tsp capers

a few sprigs of fresh dill

salt and pepper to taste

1) Chop eggs

2) Combine eggs with other ingredients

3) Serve on toasted bread
